Butter Soya Recipe
500g soya chunks cubes (soaked overnight)
250ml plain yoghurt
1 tbs ginger and garlic paste 1 tbs garam masala
1 tbs medium curry powder 1 tsp mild paprika
1 tsp jeera powder
1 tsp coriander powder salt to taste
2 tbs lemon juice
Butter sauce:
1 tbs sunflower oil
1 onion, chopped
1 tsp garam masala
1 tsp mild paprika
1 tsp turmeric powder 300g grated tomatoes 200ml fresh cream 100g butter, cubed fresh coriander – chopped.
Marinate soya chunks cubes with yoghurt, ginger and garlic paste, spices, lemon juice, some chopped coriander and salt. Coat the chunks well with the mixture, cover with cling wrap and refrigerate.
Butter Sauce
In a thick bottom sauce pan, heat oil over medium heat. Fry onion until translucent.
Add spices and stir, add the grated tomatoes and stir well.
Cook on medium temperature until the tomatoes are completely dissolved.
Remove from heat. Let the sauce cool slightly. Blend the mixture until smooth.
In the same pan the sauce was in, add oil and fry off the marinated soya chunks once cooked and golden brown
Pour the blended sauce mixture back into the pan and heat.
Add the fresh cream and simmer.
Add the cube butter one at a time until all the butter is incorporated into the sauce. Stir and simmer on low heat for 5 minutes. Garnish with chopped coriander.
Serve with roti or rice.
