Fish Curry And Brinjal

500g fish (of your choice)

1 tbs tamarind, mix in ¾ cup cold water ½ cup oil

1 large onion

4 cloves of garlic, roughly chopped

1 stem of curry leaf

6-8 grated jam tomatoes

5 level tbs crab and fish curry masala ½ tsp turmeric powder

1 level tbs salt

1 heaped tbs sugar

8-10 brinjal green chilli, optional dhania to garnish

In a shallow pot, add oil and fry onions with chopped garlic, until light golden brown.

Add a curry spoon (dishing spoon) of the grated tomatoes and the curry leaves.

Add masala and turmeric powder, and braise for a minute.

Add the balance of tomatoes and cook on medium to low heat for five minutes.

Add the tamarind and cook for another five minutes. Add the fish, brinjal, salt and sugar to taste. Cook for 20 minutes. Turn fish once only. Garnish with dhania and then serve.
