Potatoes And Roast Thyme Chicken
6 chicken pieces such as drumsticks and thighs, skin removed, optional 500g baby potatoes, skin on and halved 250g (1 punnet) button mushrooms, halved
200ml plain yoghurt
15ml (1 tbs) fresh thyme, leaves only 15ml (1 tbs) olive oil salt and pepper, to taste
Preheat the oven to 180°C
Place all the ingredients in a large zip-lock bag and shake until the chicken pieces are coated.
Tilt on to a roasting tray and cook, moving the chicken and potatoes around until golden. Serve with steamed beans, and tomato and onion sambals. Serves 4.
