Potato Salad Without Mayonnaise

THIS is a healthier salad without mayonnaise.

6 baby potatoes, skin on, boiled and halved 60ml (¼ cup) red onion, chopped

2 spring onions, chopped

1 stalk of celery, chopped

250ml (1 cup) sweetcorn

2 hard-boiled eggs, chopped

125ml (½ cup) plain yoghurt

15ml (1 tbs) Dijon mustard

10ml (2 tsp) freshly squeezed lemon juice 30ml (2 tbs) fresh dill, chopped salt and pepper to taste

In a large mixing bowl, place the potatoes, onions, celery, sweetcorn and boiled eggs.

In another bowl, combine the yoghurt, mustard, lemon juice and dill. Pour the dressing over the potatoes and gently mix. Season to taste. Refrigerat­e for at least an hour before serving. Serves 4.
