Savoury Muffins

2 cups flour 3 tsp baking powder

¼ tsp salt pinch of paprika

2 tbs spring onions

1 cup Cheddar cheese

½ cup red and yellow peppers 1 tsp dried parsley or

3 tsp fresh parsley pinch of black pepper

3 eggs 100ml cooking oil 300ml milk small tin cream-style corn

1 cup cubed chicken cooked with butter, salt and pepper, chicken spice and garlic 125g mushrooms (optional)

Sift the flour, baking powder and salt and paprika. Add the mushrooms, chicken, spring onion, cheese, peppers, parsley and black pepper.

In another bowl, whisk the eggs, oil and milk.

Add to the dry ingredient­s, mixing until just combined. Spoon into greased muffin tins, filling to twothirds full.

Bake in a preheated oven at 200ºC for 15 to 20 minutes or until golden brown. Serve warm with butter.

◆ I found this recipe on the internet. I tried it with some amendments. I omitted the chicken and mushrooms.
