Mini Chicken Burgers/ Subs

DOUGH:

4 cups cake flour

1 packet (10g) instant yeast 1 tsp salt

2 tbs sugar

½ cup oil

1 cup milk

1 cup water

Combine the dry ingredient­s and oil in a dish. Heat the milk and water together until lukewarm.

Add just enough liquid to the dry ingredient­s to form a soft dough.

Allow to rise until double in volume.

Punch down and form into small rolls.

Place on to greased oven trays and brush with the beaten egg and a sprinkle of sesame seeds.

Bake in a moderate oven until pale brown. Remove from the oven and cool. | Ramadhaan Delights

CHICKEN FILLING:

1 cup chicken fillet, cubed 1 small onion, cubed oil and butter to fry onions ½ tsp black pepper

½ tsp white pepper

½ tsp salt or to taste green onion, garlic pepper and chicken spice – add a few shakes of each crushed green chillies, optional

½ tsp crushed garlic sauces of your choice and mayonnaise

In a pot add the onions, oil and butter. Cook until translucen­t. Add the chicken and all the spices. Cook until all the water has dried.

Add the sauces and mayonnaise once

cooked and fill in the baked rolls.

ASSEMBLY:

Slice the bun, butter both sides and spread with perinaise, chicken filling and a piece of lettuce.

For subs, slit halfway down the centre, stuff with filling, top with grated cheese, chopped spring onions or peppers. Return to the oven and bake until the cheese has melted.
