Ba­nana Bread

125g but­ter

1 cup su­gar

2 large eggs

4 ripe ba­nanas

½ cup boil­ing water

1 tsp bi­carb of soda

1 tsp vanilla essence 2 cups cake flour

1 cup chopped pecan nuts (op­tional)

Cream but­ter and su­gar well. Add well beaten eggs and mashed ripe ba­nanas.

Add the sifted flour then the bi­carb of soda dis­solved in the boil­ing water.

Add bak­ing pow­der and then the vanilla essence.

Pour into a greased loaf tin or pan of your choice.

Cream cheese frost­ing:

112g smooth cream cheese soft­ened to room tem­per­a­ture

50ml con­densed milk 60g un­salted but­ter 1 cup pow­dered su­gar 15ml milk Chopped pecan nuts to

sprin­kle on top.

Bake at 180°C for about 1 hour if baked in a loaf pan.
