1 cup sugar
2 large eggs
4 ripe bananas
½ cup boiling water
1 tsp bicarb of soda
1 tsp vanilla essence 2 cups cake flour
1 cup chopped pecan nuts (optional)
Cream butter and sugar well. Add well beaten eggs and mashed ripe bananas.
Add the sifted flour then the bicarb of soda dissolved in the boiling water.
Add baking powder and then the vanilla essence.
Pour into a greased loaf tin or pan of your choice.
Cream cheese frosting:
112g smooth cream cheese softened to room temperature
50ml condensed milk 60g unsalted butter 1 cup powdered sugar 15ml milk Chopped pecan nuts to
sprinkle on top.
Bake at 180°C for about 1 hour if baked in a loaf pan.
