Potato Curry

1 medium onion, sliced

6 tbs oil

4 tbs Chilli Kad­hai Curry Paste 1 tomato, chopped salt

4 large po­ta­toes, peeled and chopped into cubes

Sauté onion in oil and add curry paste. Stir in tomato and add salt to taste.

Add po­ta­toes and lower heat, al­low­ing to sim­mer for 10-15 min­utes, de­pend­ing on the type of potato and the size of the cubes.

Add a lit­tle wa­ter to keep it from burn­ing.

It’s best cooked on medium/low heat or un­til soft and melt­ing. Gar­nish with dha­nia once cooked.

Serves 4-5.
