It’s all about the dough
The lockdown has pushed many of us out of our culinary comfort zones and in search of delicious yet doable recipes. While homemade bread may be a stretch too far for some, we have a quick and easy recipe for dough that will give you delicious bagels, flat bread and pizza. We've also included recipes for the dishes these compliment.
The dough
Ingredients:
4 cups self-raising flour 3 cups plain yogurt
Method by hand:
In a mixing bowl, sift the flour and gently fold in the yogurt using a spatula until the dough is formed. Knead the dough for six minutes on a floured surface. If the dough is too sticky, add more flour while kneading. Cover with a cloth and set aside until you're ready to use it.
Method with a mixer:
Put the self-raising flour and yogurt in a standard mixing bowl. Using the dough hook attachment, mix on low speed until combined. Knead for three minutes on medium speed until a ball forms.
Put the ball of dough onto a floured surface. Sprinkle with flour, knead a couple of times and form into a ball.
Brunch bagels
Ingredients:
Prepared dough
1 egg white, beaten Sesame seeds to decorate (optional)
Toppings for savoury bagel:
Cream cheese Pressed meat, sliced Lettuce
Tomato, sliced
Toppings for sweet bagel:
Fruit of your choice, sliced Chocolate spread
Method:
Cut the dough into six pieces. eces. Roll each piece into a rope pe and then form a circle withth the dough rope. Where each end meets, pinch together to form bagel shape. Place on a baking sheet lined with baking paper. Brush with beaten egg whites hites and sprinkle with sesamee seeds if desired. Bake at 180 °C for 12 minutes until golden brown. wn.
