Quick lamb sosaties

DRIED APRICOTS AND CURRIED LAMB EQUALS THE BEST SOSATIES

Serves 4

• 450 g cubed lamb • 125 g soft dried apricots • 1 onion, half finely chopped and the other half cut into pieces • 6 sosatie skewers, soaked in water • 45 ml olive oil • 2 cloves garlic, finely chopped • 30 ml curry powder • 30 ml brown sugar • 60 ml apricot jam • 50 ml vinegar • salt and freshly ground black pepper

Thread the lamb, onion pieces and apricots on the skewers until all the lamb has been used. Heat the olive oil in a medium-sized pan. Add the finely chopped onion and garlic. Fry lightly for 5 minutes. Add the curry powder, brown sugar, jam and vinegar. Fry for another 5 minutes. Season well with salt and pepper. Place the sosaties in the warm sauce and mix well so that they are completely coated. Heat a griddle pan until smoking hot. Grill the sosaties for 5–8 minutes a side or until cooked. Serve hot.
