Sausage roll with to­ma­to chut­ney

Ser­ves 4–6

• 1 on­i­on, fi­ne­ly chop­ped • 2 clo­ves gar­lic, fi­ne­ly chop­ped • 15 ml ground coriander • 25 ml chop­ped o­ri­ga­num • 200 g bacon, fi­ne­ly chop­ped • 400 g pork min­ce • salt and freshly ground pep­per • 500 g puff pa­stry • 1 x 400 g bott­le to­ma­to chut­ney

He­at o­ven to 180 °C. Mix the on­i­on, gar­lic, coriander, o­ri­ga­num and bacon with the min­ce and se­a­son with salt and pep­per. Shape the min­ce mix­tu­re in­to a sausage shape and pla­ce it in the cen­t­re of the pa­stry. Fold the pa­stry o­ver the min­ce and pla­ce the sausage roll se­am-si­de down on a baking tray spray­ed with non­stick food s­pray. Ba­ke for 20–25 mi­nu­tes or until gol­den bro­wn and cook­ed through. Slice in­to por­ti­ons and ser­ve hot with to­ma­to chut­ney or a­not­her sauce of your choi­ce.
