PINA COLADA

AFTER travelling halfway around the world to find one of the finest gems, Puerto Rico is a wonderful blend of life, art, good food, a true celebratio­n of being alive.

San Juan, the capital, is the birth place of the world famous piña colada.

It is believed that in 1963, the piña colada was created by Don Ramon Portas Mingot.

The original recipe is still being created daily, delighting its patrons.

Puerto Rico should be a definite destinatio­n on your bucket list.

(Serves 2)

◆ 1 cup vanilla ice cream

◆ 1 cup pineapple juice

◆ 1 cup coconut milk

◆ ¼ cup rum

METHOD

Place all the ingredient­s into a blender and pulse for 30 seconds. Pour into your favourite cocktail glass, decorate with umbrellas, pineapple pieces add a cherry to your umbrella base to keep in place.
