4 big ripe toma­toes, peeled and cut into large chunks

3 Mediter­ranean cu­cum­bers or 1 English cu­cum­ber, peeled and cut into the same size chunks as the toma­toes

2 pi­mento pep­pers, de­seeded and thinly sliced salt, to taste

1 red onion, thinly sliced and rubbed with salt

125ml cold-pressed olive oil juice of ½ lemon

30ml red wine vine­gar sesame seeds, to taste, toasted

½ bunch flat-leaf pars­ley, finely chopped
