FAT-FREE SAVOURY BROWN ROTI
MADE with brown bread flour, seasoned with herbs and spices, this variation of a traditional bread can be served with a dhal or pickles.
Ingredients
• 2 cups unsifted brown bread flour • 1 tsp salt • 1 big clove garlic • 1 fresh red chilli • a handful fresh coriander • 1 tsp toasted cumin seeds • 1 cup water • extra flour as needed
Method
Place the flour in a mixing bowl Combine salt, garlic, chilli, coriander and cumin in a pestle and mortar Crush or pound until fine, stir into the water Add mixture to flour and mix into dough Divide into 10 equal pieces Dust in flour and roll out into 20cm circles Toast on a moderately hot griddle until cooked
WHOLEWHEAT FRUIT PUDDING
THIS is the simplest pudding to make. No fat or eggs are added. It can be served either hot with pouring custard or cold with a low-fat ice cream.
Ingredients
• 1 cup mixed dried fruit
(baker’s mix) • 3 cups water • 2 tbsp sugar • 1 tsp almond essence • 1 tsp cinnamon • 1 cup coconut • 4 cups fresh wholewheat
breadcrumbs • 1 tbsp sunflower seeds • 2 tsp brown sugar
Method
Place fruit in a saucepan Add water, sugar and almond essence Bring to the boil; remove from heat, leave aside to cool Preheat oven to 180°C Add cinnamon, coconut and crumbs to fruit and mix well Press the mixture into an oven-proof pudding bowl Sprinkle the seeds and brown sugar on top Bake for 30 minutes or until the top is lightly browned
TIP
This is a crumbly pudding. If a firmer one is desired, stir in a beaten egg before baking.
