Avocados are packed with hearthealt­hy monounsatu­rated fats, which make them ideal for oil production. To extract the oil, the skin and pip are removed and the flesh is spun in a centrifuge. Westfalia avocado oil is extracted from certified avocados grown without synthetic pesticides and fertiliser­s and is ideal for culinary use.

Westfalia Plain Avocado Oil is excellent to use in everyday food preparatio­n, such as for sauces, dressings and dips and for baking, roasting and frying. Westfalia Avocado Oil Chilli-flavoured infusion has a mild bite. Try it in stir-fries, curries, marinades and chocolate-chilli desserts. Westfalia Avocado Oil Herb-flavoured infusion, flavoured with a selection of Mediterran­ean herbs, is great with meat, as a rub or drizzled over couscous, salads or vegetables. Westfalia Avocado Oil Lemon-flavoured infusion is ideal for seafood, salads, marinades and lemony bakes. Westfalia Avocado Oil Basil-flavoured infusion tastes like summer in a bottle. Drizzle it liberally over salads, chilled soups or fresh strawberri­es, or make pesto with it. Westfalia Avocado Oil Garlic-flavoured infusion is perfect for roasting potatoes and vegetables, or as a healthy alternativ­e to garlic butter.

COOKING WITH AVOCADO OIL Mild avocado oil is a healthy cooking option. When some oils are heated to high temperatur­es, the good fats can be transforme­d into harmful trans-fats. Because of avocado oil’s high smoke point (250ºC, higher than most cooking oils), it is safe to use for frying.

STORING AVOCADO OIL Like any natural product, avocado oil can be damaged by exposure to oxygen and bright light which destroys nutrients and can affect the flavour. Keep in a cool, dark place away from direct sunlight (but not in the fridge).
