BUTTERNUT AND SWEET POTATO SALAD WITH BILTONG

1 large butternut, peeled and diced 3 medium sweet potatoes, washed and diced 45ml (3 tbsp) olive oil 2 sprigs fresh rosemary Salt and black pepper 2.5ml ( 1/2 tsp) ground cinnamon Handful fresh rocket leaves 3 rounds feta cheese 200g moist biltong, thinly sliced 30ml (2 tbsp) toasted pine kernels Preheat the oven to 200°C. Place the butternut and sweet potato cubes in a plastic bag. Add the olive oil, rosemary sprigs, salt, pepper and cinnamon. Shake the bag well to coat the vegetable cubes with oil and spices. Line a baking sheet with baking paper. Turn the vegetables out onto the baking sheet and spread them out evenly. Bake for 20 minutes, or until cooked. Remove from the oven and allow to cool. Arrange rocket leaves on a pretty glass plate. Spoon the vegetables on top. Cube the feta cheese and place it on top of the vegetables, followed by the biltong slices. Sprinkle the pine kernels over. Makes a delicious light meal, served with crusty bread and butter. Serves 8
