APPLE AND PEAR CHUTNEY WITH GOAT’S CHEESE AND CRACKERS
Chutney:
200ml dry white wine Juice of 1 lemon 30-45ml (2-3 tbsp) honey Small cinnamon stick 2 cloves 2 apples, peeled cored and chopped 2 pears, peeled cored and chopped
Other ingredients:
2 x 100g logs of goat’s cheese Crackers Pinch of dried chilli flakes Handful fresh rocket For the chutney, place wine, lemon juice, honey, cinnamon and cloves in a saucepan and bring to the boil. Add the chopped apples and pears and simmer gently for about 10 minutes until the fruit is soft but not disintegrating. Remove from the heat and leave to cool completely.
Slice each cheese log into thick discs and brown cut-side-down in a hot, non-stick frying pan. Place each disc on a cracker and serve topped with chutney, chilli flakes and rocket. Serves 4
