BAKED FISH WITH VEGETABLES

FRESH whole fish, marinated and baked. Serve with lightly cooked tender green beans, julienned carrots and button mushrooms.

Ingredient­s

2 x 600g whole fish, trimmed, rinsed and drained juice of 1 lemon 2 tbsp soy sauce 2 tbsp Worcester sauce 2 tbsp tomato sauce 2 tbsp crushed garlic 2 tsp crushed ginger 4 tbsp oil 1 tsp coriander powder 1 tsp cumin powder coarse pepper

Method

Preheat oven to 190°C Make 2 slashes on each side of fish Combine rest of ingredient­s for marinade Place fish on a large sheet of foil Brush with the marinade inside and out Reserve about 2 tbsp of the marinade Cover fish and bake in oven for 20 minutes
