COLESLAW WITH A DIFFERENCE

The shredded cabbage with carrot salad can be made into an interestin­g starter with the addition of fresh and dried fruit, nuts and corn niblets.

Ingredient­s

5 cups finely shredded cabbage 2 cups grated carrot 1 green apple, cored and diced ½ cup toasted cashew nuts ½ cup mixed dried fruit 1 x 420g can corn niblets, drained some slices fresh pineapple, diced dressing

Method

Place all the ingredient­s in a large salad bowl Pour dressing over and toss lightly Serve chilled.

DRESSING

Ingredient­s

1 cup mayonnaise ½ cup cream 2 tsp dry chilli flakes 1 tsp toasted cumin seeds salt, pepper as needed finely chopped mint

Method

Place ingredient­s in a bowl Stir well to combine.
