Dalewood Winelands Brie with Cape Chilli is a totally natural product. It contains no colorants, preservati­ves or artificial flavouring. It has a smooth, consistent texture and a creamy mouth-feel, with a slight hint of fruity chilli flavour. It is delicious when young or fully matured at seven weeks. Because the chilli is mild, you can do anything with it — served with exotic fruits and preserves, grilled on toast for breakfast, in a lavish dessert or on a cheese board. It is made with quality milk from a pasture-fed herd, which produces a quality cheese. Rob is absolutely passionate about his stud herd of Jersey cows. He dedicates a lot of time and energy to raising them, right from the science and study of genetics to the pastures he plants. We use milk from our own herd only. We follow European artisanal cheesemaki­ng traditions. All our cheeses are handmade, from the cutting of the curd to the hand salting of each individual cheese. There is no high tech equipment in our cheesery at all.
