GRILLED MASALA CHOPS WITH ONION

Tender lamb cutlets grilled with curry masala. The pickling onions are cooked in fizzy cola drink and balsamic vinegar until reduced and caramelise­d. For oven grilling, wrap chops in foil and cook for 15 minutes, then unwrap and grill.

Ingredient­s

12 lamb braai chops 1 tbsp roasted masala 2 tbsp oil salt 500g pickling onions 1 cup cola drink ½ cup balsamic vinegar 1 tsp chilli flakes salt as needed

Method

Trim the chops Heat a ridged grill pan until smoking Place the meat in a single layer and grill on both sides until tender Mix masala and oil, brush over chops and sizzle for a few minutes Place onions and cola in a saucepan Cook on moderate heat until liquid has evaporated Add the balsamic vinegar and cook until reduced and a thick caramel sauce results Stir in chilli flakes Serve chops and onions with mash or vegetables of choice.
