Please offer suggestion­s of what to do with Christmas leftovers, especially ham and turkey.

Both are such versatile meats that can be used in many dishes — and both freeze well. Leftover turkey makes an excellent curry, turkey mayonnaise filling for sandwiches or wraps, or add sliced turkey to different salads as one would chicken. Leftover ham is particular­ly good sliced and used in sandwiches. Or chop the leftover ham into cubes and use it for fillings in omelettes, savoury tarts or quiche. My favourite way of using up leftover ham is to make that wonderful French classic croque monsieur, made with a thick slice of ham and gruyère (or cheddar) sandwiched between two slices of white bread buttered on both sides. Melt a generous knob of butter in a nonstick frying pan and fry the croque monsieur on both sides, pressing down with a spatula, till golden brown. Serve immediatel­y.
