Think of Wim­ble­don, and hot sunny days … Pimms is like fruit salad in a gin-based re­fresh­ing drink.

2 or­anges, rinsed, quar­tered, sliced and pips re­moved

1/4 cu­cum­ber, rinsed and thinly sliced

5-10 straw­ber­ries (or other berries of your choice) rinsed, hulled and halved

10-12 small sprigs fresh mint

500ml (2 cups) Pimms

6 cups lemon­ade (or mix lemon­ade with gin­ger ale)

Put the fruit and mint in a large (3l) jug or glass dis­penser. Pour in the Pimms and lemon­ade. Stir and add plenty of ice. To serve, pour into long glasses, en­sur­ing each glass has some fruit, a sprig of mint and blocks of ice.
