In a medium saucepan, mix the sweet corn with the stock and stir in the soy sauce. Heat through, then pour the warmed sauce over the chicken and mix in gently.

Roll out the pastry to just bigger than the pie dish. Dab the outside of the dish with milk and cover with the pastry, gluing it down on the milky edges. Brush the top of the pie with a little more milk and bake in the oven for 25-30 minutes until the pastry is puffed and golden brown.

*Tip: to avoid pastry from sinking in the middle, put an upside-down glass or oven proof egg cup in the middle of the dish during baking. Rhum Arrange There s no perfect meal that can’t be complement­ed with a great drink.

On a recent visit to the hidden gem that is Reunion Island, I discovered the wonders of rum. The spirit is quite prevalent in most islands around the world and is mostly used to make delectable cocktails.

One thing locals from the Reunion Island enjoy is a good rum punch and a fine bottle of beer. Like any good quality spirit, the rum can be enjoyed on its own or as a cocktail.

Typically, the island offers a range of these rums, including what they term Rhum Arrange”. This is rum infused with spices, herbs and fruit. It can be anything from vanilla pods, oranges, ginger and strawberri­es.

But you don’t have to be sitting on a beach bar in a bikini to enjoy some of this island life.

The exciting thing is that this drink can also be done at home by acquiring a white rum as a base and adding the spices and fruit you like.

Locals say for the best infusion and flavour, keep it sealed for at least a month. It will be worth it.
