Proud Blake can take the heat

Chef Blake Anderson is one of the country’s most renowned chefs with 13 years of experience and numerous awards under his toque. In October last year Blake was appointed as complex executive chef at Montecasin­o which means he now oversees the daily operations of the Tsogo Sun flagship property’s five restaurant­s – including 3SIXTY Lounge and Billy G. Blake brings to Montecasin­o his innovative culinary style and expertise which come to life in his recipe and menu developmen­t. This highly innovative chef is adept at using modern techniques and his approach ensures quality results.

As an adaptable, responsibl­e, keen and hardworkin­g individual, he has been part of the South African National Culinary Team since 2013. Blake’s role in the team is to oversee the display work and aspic use for the cold table, as well as working on the hot kitchen menu.

“Being a part of the SA National Culinary Team is the greatest opportunit­y of my career. To represent my country in something I am passionate about is very special. I have the opportunit­y to work with and compete against some of the world’s greatest chefs,” Blake said.

Blake studied advanced hospitalit­y and catering management at Allenby Campus/ Damelin Management/AHLA completing his qualificat­ion in 2002 with a distinctio­n. He made his entrance into the culinary industry in 2003 with practical training at Moorcroft Manor, a five-star

country hotel.
