SPICY YELLOWTAIL WITH TZATZIKI

Serves 4 INGREDIENT­S 4 150g-170g yellowtail fillets THE MARINADE 2 tbs dried chilli flakes

3 tbs garlic

50g chopped parsley

50g chopped coriander 100ml extra virgin olive oil

1 large lemon, juiced and zested 2 tbs paprika

1 tsp salt

100ml olive oil THE TZATZIKI 200g cucumber, peeled and finely grated 1 lemon, juiced and zested

50g mint, finely chopped

50g parsley, finely chopped

½ lemon, juiced and no seeds

Salt and pepper to taste METHOD Mix all marinade ingredient­s into a mixing bowl, whisk and season to taste.

Place yellowtail fillets in a container, pour the marinade over the fish and rub it in gently. Allow to sit for 15 minutes.

While the fish is marinading, in a separate mixing bowl combine tzatziki ingredient­s together, season and chill in the fridge.

When your fish has marinated, place in a searing hot pan (skin side down), turning after 3 minutes and cooking for a further 4-6 minutes on a medium heat until fish is firm and cooked.

Serve with a lemon wedge, a generous serving of tzatziki, with your choice of sides. | Khotso Mosia
