HOW TO MAKE WORK IN VEGGIES
MACARONI AND CHEESE WITH CAULIFLOWER
Serves: 4 Add a bit of crunch by sprinkling with chopped spring onions.
INGREDIENTS
375g macaroni
1 cauliflower head, cut into bite-sized pieces
60ml butter
3 cups hot milk
1 cup cheddar cheese, grated, plus extra for sprinkling
80g self-raising flour
1 pinch salt
METHOD
Preheat oven to 200ºC.
Cook pasta according to packet instructions. Drain and set aside.
Blanch cauliflower until just tender. Drain and set aside.
Melt butter in a saucepan. Add flour and cook for a minute.
Gradually add milk, stirring continuously, until mixture forms a smooth sauce.
Add cheese and season. Stir until cheese has melted.
Toss pasta and cauliflower with sauce and spoon into an ovenproof dish.
Sprinkle over extra cheese and bake for 25 minutes or until golden.
GOOD IDEAS
Replace cauliflower with blanched broccoli or cooked butternut.
Use PnP ready-made cheese sauce if you’re in a hurry.
