MACARONI AND CHEESE WITH CAULIFLOWE­R

Serves: 4 Add a bit of crunch by sprinkling with chopped spring onions.

INGREDIENT­S

375g macaroni

1 cauliflowe­r head, cut into bite-sized pieces

60ml butter

3 cups hot milk

1 cup cheddar cheese, grated, plus extra for sprinkling

80g self-raising flour

1 pinch salt

METHOD

Preheat oven to 200ºC.

Cook pasta according to packet instructio­ns. Drain and set aside.

Blanch cauliflowe­r until just tender. Drain and set aside.

Melt butter in a saucepan. Add flour and cook for a minute.

Gradually add milk, stirring continuous­ly, until mixture forms a smooth sauce.

Add cheese and season. Stir until cheese has melted.

Toss pasta and cauliflowe­r with sauce and spoon into an ovenproof dish.

Sprinkle over extra cheese and bake for 25 minutes or until golden.

GOOD IDEAS

Replace cauliflowe­r with blanched broccoli or cooked butternut.

Use PnP ready-made cheese sauce if you’re in a hurry.
