CORIANDER BUTTERMILK GRILLED VEGETABLES

2 cups buttermilk

Salt and freshly ground black pepper Handful coriander, finely chopped 1 clove garlic, knob of ginger crushed 1 green chilli, finely chopped

200 g sweetcorn

400 g brown mushrooms

250 g patty pans

1 red pepper

2 spring onions

2 rosemary sprigs

Olive oil

Method

1. Mix the buttermilk, salt and freshly ground black pepper, coriander, garlic and ginger.

2. Place vegetables in a large bowl and pour the buttermilk mixture. Leave to marinate for 20 minutes. Remove and pat the vegetables dry with paper towel.

3. Place vegetables on an olive oil-greased griddle pan over medium coal heat and grill for 15 minutes. Remove and serve.
