Thembeka Sibanyoni was born and bred in Soweto, and worked in IT prior to discoverin­g her love for food. She started experiment­ing with more recipes when her husband couldn't get enough of her kitchen creations. Tee, as she's commonly known, now owns a catering company that provides private and group cooking lessons. Even though she prefers savoury dishes, Tee whipped up a scrumptiou­s peppermint tart dessert for us. PEPPERMINT TART IN A GLASS

Serves: 4

Prep time: 25 mins

Ingredient­s

1 packet mint biscuits

1 can caramel

2 cups cream

1 peppermint chocolate slab 1 mint chocolate slab Break the biscuits until crumbly. Set aside. In a bowl, whip the cream until stiff peak form. Add and fold in the caramel until combined. Pour mixture into a piping bag and pipe into bottom of glasses. Add a layer of crumbled biscuits and place layer of chopped peppermint chocolate on top. Pipe another layer of cream, followed by biscuits then chopped mint chocolate. Top with cream. Garnish with chocolate shavings.
