ASIAN FRIED DUNKED WINGS

Serves: 4

Prep time: 2 hrs 30 mins

INGREDIENT­S

400 g chicken wings, cut into winglets and drumettes

2 cloves garlic, finely chopped

2 cm fresh ginger, finely chopped

3 T honey

1 lime zest and juice

3 T brown sugar

½ cup soy sauce

3 T hoisin sauce

Salt and black pepper

½ cup water

Oil for deep frying

METHOD

1. In a large bowl, mix garlic, ginger, honey, lime zest and juice, sugar, soy sauce and hoisin sauce. Add the chicken and leave to marinate in the fridge for 2 hours or overnight. Remove meat from marinade, and leave until it reaches room temperatur­e.

2. In a pan, boil the marinade with the water. Cook until the sauce has thickened.

3. In another pot, heat the oil until hot. Season chicken with salt and black pepper and deep fry until golden brown. Remove and drain excess fat by shaking the chicken. Place in the sticky sauce and leave for about 5 minutes until fully coated coat.

4. Serve with chips and sauces.
