PREGO ROLLS

Serves: 4 Prep time: 1 hr

INGREDIENT­S

4 x 100 g tenderised steak

3 T olive oil

1 onion, finely chopped

1 red pepper, finely chopped

2 garlic cloves, crushed

1 tsp paprika

1 red chilli, finely chopped

½ cup dry red wine

150 g cherry tomatoes

1 T sugar

Salt and black pepper

4 portuguese rolls Rocket leaves

1 red onion, thinly sliced

hot mayonnaise

METHOD

1. Heat a large saucepan, add oil, onion, red pepper, garlic and chilli. Sauté until soft. Add wine and cook until slighlty thickened. Leave to cool.

2. Place the steak in the marinade for about 30 minutes. Heat a griddle pan and grill steak for about 5 minutes on each side until cooked. Remove and set aside in a warm place.

3. In the same saucepan with the marinade, add cherry tomatoes and sugar, cook for 10 minutes.

4. On the bottom half of each roll, place the rocket leaves, steak, then followed by the tomato sauce and red onions. Squeeze a small amount of hot mayo on top. Serve.
