CHILLI BEEF MINCE TA­COS

IN­GRE­DI­ENTS

500 g minced beef

4 T oil

1 onion, finely chopped

1 gar­lic clove, crushed

1 tsp gin­ger, crushed

1 chilli, finely chopped Salt and pep­per

1 tsp chipo­tle spice

1 tsp pa­prika

1 cup beef stock

250 g cherry toma­toes,

1 T sugar

3 T tomato paste hand­ful co­rian­der

4 ta­cos

2 jalapeno slices

1 cup gua­camole

1 cup cheese, grated

METHOD

1. In a large saucepan, heat oil and sauté onion, gar­lic, gin­ger and chilli.

2. Add mince and cook for 10 min­utes, stir­ring all time. Sea­son with salt, pep­per, chipo­tle and pa­prika.

3. Add stock, cherry toma­toes, sugar and tomato paste. Stir un­til well com­bined, re­duce heat and sim­mer un­til liq­uid is re­duced. Add co­rian­der. Serve ta­cos with mince, jalapeno slices, gua­camole and cheese.
