Crunchy Jewel Rice

1 cup bas­mati rice

2 tsps turmeric

1/2 cup macadamia nuts, halved 1 cup dried cran­ber­ries

1 spring onion, finely sliced 3 cloves gar­lic, crushed 3/4 cup olive oil 1/2 lemon, juiced

1 orange, juiced and zested Salt and black pep­per Mi­cro herbs


1. In a pot, bring rice and turmeric to boil, sim­mer and cook as per in­struc­tion on pack­age. Re­move and leave to cool.

2. Add nuts, cran­ber­ries and spring onion. In an­other bowl, mix gar­lic, olive oil, lemon juice, orange juice and zest, salt and black pep­per to taste.

3. Just be­fore serv­ing, pour the dress­ing over the rice and leave to rest in the fridge for about 10 min­utes. Serve.
