Crunchy Jewel Rice

1 cup basmati rice
2 tsps turmeric
1/2 cup macadamia nuts, halved 1 cup dried cranberries
1 spring onion, finely sliced 3 cloves garlic, crushed 3/4 cup olive oil 1/2 lemon, juiced
1 orange, juiced and zested Salt and black pepper Micro herbs
1. In a pot, bring rice and turmeric to boil, simmer and cook as per instruction on package. Remove and leave to cool.
2. Add nuts, cranberries and spring onion. In another bowl, mix garlic, olive oil, lemon juice, orange juice and zest, salt and black pepper to taste.
3. Just before serving, pour the dressing over the rice and leave to rest in the fridge for about 10 minutes. Serve.
