FRUITY NUT SCONES WITH SALTED CARAMEL SAUCE

Serves: 6-8 Prep Time: 40 mins Ingredient­s

1 x 500 g scone mix 125 g butter, cubed

1 egg

50 g butter, melted 100 g mixed nuts 100 g mixed dried fruits, chopped

Salted caramel sauce

Method

1. Preheat oven to 180°C. In a large bowl, add the scone mix and butter, and using both hands, mix until it resembles crumbs. Add egg and mix through using a knife until the dough forms a ball. Chill in the fridge for 15 minutes.

2. Remove and roll out into a rectangula­r shape. Brush the inside with melted butter, then sprinkle nuts and fruits. Fold it into a roll, roll the dough again and cut into equal slices.

3. Place on baking tray and bake for 15 minutes, or until browned. Remove and leave to cool completely. Serve with salted caramel sauce.
