Food – Vegan Dishes

Ingredients
3 T olive oil
1 onion, finely chopped
2 garlic cloves, crushed
2 red chilli, finely chopped 3 sprigs fresh thyme, removed from stem
2 tomatoes, grated
¼ cup tomato paste
1x 400 g can butter beans, liquid drained
1 x 400 g can baked beans in tomato sauce
1x 400 g can peas, liquid drained 1x 400 g can corn, liquid drained Salt and freshly ground black pepper
Method:
1. Heat a medium pot, add oil and onion, sauté until translucent. Add garlic, chilli and thyme, cook for another 2 minutes on medium heat.
2. Stir in tomatoes and tomato paste, cook for another 10 minutes. Add butter beans, baked beans, peas and corn, stir to combine and simmer at low heat. Season with salt and freshly ground black pepper.
3. Serve hotpot with pita triangles.
