MEXICAN BEAN QUESADILLAS
Serves: 4 Prep Time: 15 mins
Ingredients
3 T oil
1 onion, finely chopped
1 clove garlic, chopped
1/2 red pepper, chopped
3 T tomato puree
1 tsp brown sugar 1/2 x 400 g can black bean, drained 1/2 x 400 g can red kidney beans, drained 1 x 210 g can corn kernel, drained
2 cups Gouda cheese, grated
4 soft tortillas
Method:
1. In a large frying pan, heat oil and sauté onion and garlic. Add red pepper and cook for 2 minutes. Add tomato paste, sugar, beans and corn, cook for another 3 minutes on low heat. Remove and set aside.
2. On a plate, place one tortilla, sprinkle cheese at bottom, then spread the bean mixture on top, sprinkle with more cheese. Place another tortilla on top. Place in microwave on grill, cook for 1 minute until tacos start to brown and cheese has melted. Repeat the same with the second one.
3. Remove and slice quesadillas into 4. Serve.
