CURRIED CHICKEN ROTI

Serves: 4 Prep Time: 45 mins

Ingredient­s

3 T sunflower oil

400 g chicken breasts, cubed

3 T butter

1 onion, finely chopped

2 cloves garlic, crushed

1 sachet butter curry paste

3 T tomato paste

1 x 400 g can tomatoes, chopped 2 T brown sugar

Salt and pepper to taste

1/4 cup cream

Handful coriander, chopped Roti chutney cucumber raita

Method:

1. In a large saucepan, heat oil, and brown chicken on all sides. Remove from pot and set aside in a warm place. Add butter, onions and garlic, sauté until translucen­t.

2. Add curry paste and tomato paste and stir for about 3 minutes. Add chopped tomatoes, sugar and chicken and cook for another 15 minutes until all flavours have blended in and chicken and tomatoes are cooked. Season with salt and pepper.

3. Pour cream and stir, then add coriander, mix.

4. Heat roti, place curry in middle, fold. Serve with chutney and cucumber raita.
