DUNKED LAMB MEATBALL SUB

Serves: 4 Prep Time: 45 mins

Ingredient­s

500 g minced lamb

1 onion, finely grated and excess water removed

2 garlic cloves, crushed

1 egg salt and freshly ground black pepper 2 tsps fresh rosemary

2 tsps fresh thyme

Small bunch parsley

Oil

4 T honey

1/4 cup soy sauce

1tsp ginger, grated

1 medium French loaf

Sour cream spread

1 cucumber, sliced into ribbons 1 avocado, thinly sliced 1/4 cup sliced piquant peppers

Method:

1. In a large bowl, place minced lamb, onion, garlic, egg, salt, freshly ground black pepper, rosemary, thyme and parsley, mix to combine. Using a spoon, take equal amounts of meat and place into your palms and roll to make a ball. Place in fridge for about 20 minutes.

2. In a medium bowl, mix honey, soy sauce and ginger, set aside. In a large deep pot, heat oil and place balls, fry for 10-12 minutes, stir to brown and cook on all sides. Remove from oil and shake off excess fat, immediatel­y dip into the soy sauce mixture and coat. Remove and place in warm place.

3. Slice open the french loaf, spread both sides with sour cream spread, fill with cucumber, avo, meatballs and peppers.
