CAULIFLOWE­R RICE WITH ASIAN MUSHROOMS

Ingredient­s

3 T avocado oil

250 g punnet button mushrooms 3 spring onions, finely chopped 1 clove garlic, crushed

1 tsp fresh ginger, crushed 1 lemongrass, finely crushed Sea salt and freshly ground black pepper

4 T honey

1 T rice wine

¼ cup soy sauce

1 tsp corn starch

400 g cauliflowe­r rice Sesame seeds

Method:

1. In a large skillet, heat pan until very hot, add oil and mushrooms. Fry until browned on all sides for about 2 minutes. 2. Reduce heat to medium and add onions, garlic, ginger and lemongrass. Stir fry for another 3 minutes, stirring all the time. Season with salt and freshly ground black pepper. 3. In a large bowl, add honey, rice wine, soy sauce and corn starch, stir to combine until smooth. Add to the mushrooms and simmer on low heat until flavours have combined and sauce thickened. 4. Sprinkle with sesame seeds and serve with cauliflowe­r rice.
