DEEP FRIED BROCCOLI

Ingredients
Oil for frying
300 g broccoli, cut into stems 1 cup flour, sifted
1 tsp baking powder
Salt and freshly ground pepper 1 tsp cayenne pepper
½ cup cold sparkling water 2 tsps Dijon mustard
Method:
1. In a large deep frying pot, heat oil until hot. Mix together sifted flour, baking powder, salt and pepper to season and cayenne pepper in a bowl. Add water and mix until a smooth flowing batter forms (add more water if required). Add mustard to combine.
2. Dip broccoli into batter, remove and let drip some batter, add to hot oil and fry for about 5 minutes on all sides until browned and cooked. Remove and drain excess oil on a kitchen paper towel.
3. Serve with chilli chutney.
