What is rustic about your food? The recipes are mostly old and comforting, with a little added twist.

What is your idea of a perfect dinner? Tasty local food, paired with the best local wine — you’re bound to wear a smile afterwards.

What aspects of your job steal your joy sometimes? Not spending as much time with my wife and daughter. The worst is having to sneak a work weekend away into my schedule.

What helps you keep up with the pace of the culinary industry? Beer helps release my stress, though my happy dances help me stay abreast of the pace. I also can’t keep still, so I always need something to occupy my mind.

What six ingredient­s are currently in your refrigerat­or? Thyme, coriander, rocket leaves, tomatoes, red spring onion and avocado.
