Food – Salad Dinners

Nutritious, filling and quick-to-make salads are perfect for lazy weeknights. Plus, they won’t leave you with a case of post-meal guilt!

APPLE, CELERY AND SNOEK SALAD

Serves: 2

Prep Time: 25 mins

Ingredient­s

2 cups mint leaves

½ cup pine nuts

½ lemon juice

1 tsp lemon rind

½ cup olive oil

2 firm Pink Lady apples

1 celery

1 bunch kale

1 sweetcorn, grilled

200 g smoked snoek

Method:

1. In a food processor place mint leaves, pine nuts, lemon juice and lemon rind. Blend, adding olive oil slowly until well blended to a pesto. Set aside and refrigerat­e for later.

2. Thinly slice the apples and drizzle with a little lemon juice to prevent turning brown, set aside. Thinly slice the celery and roughly chop the kale. Set aside as well. Remove the corn from the cob.

3. Cut the snoek into bite-sized pieces and arrange on plate, as well as apple slices, celery slices, kale and corn kernels.

4. Drizzle with mint pesto just before serving.
