BRANDY SNAPS
Makes: 20 Prep Time: 20 mins
Ingredients
100 g butter
100 g castor sugar
60 ml golden syrup
5 ml brandy
100 g cake flour
5 ml ground ginger
Method:
1. Preheat oven to 180°C. Place the butter, castor sugar, golden syrup and brandy in a saucepan and heat over low heat until sugar has dissolved, but is not boiling.
2. In a bowl, sift together flour and ground ginger. Add to the syrup and stir quickly to combine.
3. Press a little dough out into rounds on prepared baking sheets, using a little dough at a time, and spreading them far apart. Do not spread the dough out too thickly.
4. Bake for 8-9 minutes or until golden brown. Keep an eye on them so they don’t burn. Remove from oven and allow to slightly cool.
5. Using a spatula to lift the rounds and working fast, wrap each on the handle of wooden spoon. Set aside until cooled and set.
6. Serve with berry sauce.
