QUICK RUSTIC T-BONE STEAK SERVED WITH ASPARAGUS, CREAMY MUSHROOM SAUCE AND GARDEN SALAD

Ingredients
Handful rocket leaves
5 spring onions
85 g rosa tomatoes
150 g baby beetroot
1 avocado
3 T butter
1 T garlic, crushed
400 g brown mushroom
Crushed salt and black pepper
3 T double thick cream
4 T butter
2 sprigs thyme
600 g T-Bone steak
100 g Asparagus
In a mixing bowl, place rocket leaves, add sliced tomatoes. Chop the spring onions and add together with baby beetroots. Slice the avocado and add. Heat a frying pan until very hot. Add butter, remove from heat and swirl to melt, return pan to stove, add garlic, stir once, then break the mushrooms with your palms. Add to pan and fry for 3 minutes on high heat. Reduce heat, add cream, salt and pepper, stirring to mix. Heat another frying pan until smoky hot, then add butter, remove quickly and swirl to melt, return to heat and add thyme and steak, cooking for about 10-15 mins on each side, keep basting with butter. Add asparagus and cook together for about 3-5 mins to absorb the flavours. Serve with asparagus, creamy mushroom sauce and garden salad.
