FRUIT, NUT AND GOAT'S CHEESE SALAD

Ingredient­s

2 pears

4 nectarines

Mixed baby leaves of beetroot, spinach and rocket

100 g goat's cheese

1 cup pomegranat­e

½ cup walnuts, roughly chopped

Method:

1. Slice the pears thinly and drizzle with lemon juice to prevent oxidation. Thinly slice the nectarines and also drizzle with a little lemon. Arrange the fruit on a platter.

2. Place the mixed leaves on the side of platter, then crumble goat's cheese on top. Sprinkle pomegranat­es and walnuts on salad. Sprinkle with a little lemon juice just before serving.
