True Love



Serves: 2-3 Prep Time: 30 mins


2 courgettes, thinly sliced

50 g snow peas

250g boerewors

1 cup piquant peppers

½ cup balsamic vinegar

¼ cup honey

3 tsps piquant sauce


1. Bring to boil salted water and blanch the courgettes and snow peas for about 2 minutes. Remove and set aside to cool.

2. Heat a frying pan until very hot. Cut the boerewors into bite-sized pieces, place into hot pan and fry for about 10-12 minutes until browned, cooked and juicy.

3. In the same pot, add balsamic vinegar, honey and piquant sauce. Bring to the boil, then simmer until sauce is thickened and reduced.

4. In a salad bowl, arrange courgettes, snow peas, piquant peppers and meat together, toss to mix. Serve drizzled with reduced piquant balsamic vinegar dressing.
