100 g baby potatoes

Sea salt

Olive oil

Fresh lemon juice

2 chicken breasts

Salt and pepper

Chipotle spice

100 g green beans, topped and tailed

3 radishes, thinly sliced

2 avocados, sliced


1. Preheat oven to 180°C. Parboil baby potatoes until slightly tender. Remove and set aside. Press potatoes with a fork to smash. Season potatoes with sea salt, drizzle with olive oil and lemon juice.

2. Season chicken breasts with salt, pepper and chipotle spice, drizzle with olive oil and rub to marinate. Place the chicken and potatoes on griddle pan, and place in oven. Grill for 20 minutes, turning once until chicken is cooked through and potatoes are crispy.

3. In salted water, blanch green beans for about 3 minutes. Remove and set aside.

4. On a platter, arrange green beans, potatoes, radish and avocado. Sprinkle with lemon juice or favourite salad dressing. Top with sliced chicken.
