VETKOEK AND CURRIED MINCE

Ingredients
500 g ready-made vetkoek mix Oil for frying
4 T sunflower oil
1 onion, finely chopped
1 clove garlic, crushed
1 tsp ginger, crushed
500 g lean minced beef
2 T medium curry
1 T hot curry
2 T tomato paste
1 x 410 g can tomatoes, chopped 2 T brown sugar
1 T sweet chilli sauce
½ cup beef stock
Salt and pepper to season Handful coriander, chopped
Method
1. In a bowl, prepare the readymade vetkoek mix according to instructions on the packet. Roll the dough into small balls, and fry to make mini vetkoeks. Set aside once fried until needed.
2. In a large saucepan, heat oil and sauté onions for a minute. Add garlic and ginger. Sauté for another minute and add curry
