VETKOEK AND CURRIED MINCE

Makes: 16 Prep Time: 30 mins

Ingredient­s

500 g ready-made vetkoek mix Oil for frying

4 T sunflower oil

1 onion, finely chopped

1 clove garlic, crushed

1 tsp ginger, crushed

500 g lean minced beef

2 T medium curry

1 T hot curry

2 T tomato paste

1 x 410 g can tomatoes, chopped 2 T brown sugar

1 T sweet chilli sauce

½ cup beef stock

Salt and pepper to season Handful coriander, chopped

Method

1. In a bowl, prepare the readymade vetkoek mix according to instructio­ns on the packet. Roll the dough into small balls, and fry to make mini vetkoeks. Set aside once fried until needed.

2. In a large saucepan, heat oil and sauté onions for a minute. Add garlic and ginger. Sauté for another minute and add curry

 ??  ?? powders. Add mince and brown for about 10 minutes, stirring all the time. Add tomato paste, chopped tomatoes, brown sugar and sweet chilli sauce and cook for about 20 minutes on medium heat. Pour beef stock and cook until mince is cooked and there's no liquid. Season to taste. Add coriander.
3. Make a slit in the vetkoeks and fill up with warm
curried mince. Serve with chutney.
