BUTTER CHICKEN CURRY AND RICE

Prep Time: 30 mins Ingredient­s 3 T oil

1 onion, finely chopped 2 tsps garlic, crushed

1 tsp ginger, crushed

2 T curry paste

4 chicken breast, cubed

1 cup chicken stock

1 cup buttermilk Handful coriander, chopped 1 cup basmati rice Method

1. In a saucepan, heat oil and sauté onion, garlic and ginger until translucen­t. Add curry paste and chicken breast, fry for about 2 minutes, stirring all the time. Add stock and simmer for 10 minutes.

2. Add buttermilk and cook through for another 5 minutes on medium heat. Add coriander and mix through.

3. Cook basmati rice according to instructio­ns on package. Serve with butter chicken curry.
