VEGETABLE STIR-FRY WITH EGGS

SERVES: 4 // PREP + COOKING TIME: 35 MINUTES

INGREDIENT­S

2 tbsps olive oil

1 onion, roughly chopped

2 cloves of garlic, chopped

400 g vegetable stir-fry mix

2 tsps paprika

410 g can chopped tomatoes

4 eggs

115 g cheddar cheese, coarsely grated Salt and freshly ground black pepper

METHOD

1. Heat the olive oil in a deep-frying pan. Add onion and garlic, and cook for 4 minutes, stirring frequently until they soften. Add the vegetable stir-fry and continue to cook over medium heat for 3-4 minutes. Stir in paprika, canned tomatoes and seasoning. Bring to the boil and gently simmer for about 10 minutes. Reduce the heat to low.

2. Make 4 wells in the tomato mixture, break an egg into each, and season. Cook over a gentle heat until the egg whites begin to set.

3. In the meantime, preheat the oven grill. Sprinkle the cheese over the eggs and oven grill for about 5 minutes or until the eggs are set. Serve immediatel­y.
